Frozen Mushrooms: just as healthy as fresh!

It is a preconception that fresh vegetables are healthier than frozen vegetables as frozen vegetables contain all of the vitamins, minerals and other nutrients that are important for your body. It is the speed of the preparation and freezing process that determines the quality and the nutritional value.

Quick preparation
The least amount of time that passes between the harvest of vegetables and their preparation, the better the retention of nutrients. Frozen vegetables are processed and packaged after harvest, while fresh vegetables are often stored for a longer period of time, first in the store, and then at home. Frio Frigo mushrooms are processed and frozen within a few hours after harvest.

Quick Frozen
It is important that the freezing of vegetables occurs quickly, as large ice crystals form, which can damage the vegetables. Mushrooms from Frio Frigo are therefore, sent through a tunnel at a temperature of -40°C. The final temperature of the mushrooms on exit of the tunnel is -18°C or colder, therefore retaining essential nutrients of the mushroom along with taste and aroma.
